I think this may be a case of tradition and established culture impacting the realities of participating in modern life. The Amish ascribe to many ways of life - but now take contracting jobs doing roofs with new materials, framing, etc. And drug production + sales it seems...

It is dangerous to assume that a person behaves the way they do simply based on choice - while ignoring the cultural, social and familial factors that contribute to it.

For instance, Sam noted that he tried mustard for the first time only a few years ago. Now he is eating duck, traveling the world, eating any kind of crustacean he can get his hands on.

There will always be people who abuse and hide behind the tenets of the culture the "need" to be a part of - but there are also as many or more who are only there because that is all they have known.

One day, we can all be Sam eating mustard.
