That apostrophe situation is not correct. Pretty much only use the apostrophe to show ownership. Pluralization should not be done with apostrophes.

Amber would not be offended because she only reads it when I alert her to something that would interest her, which is rare. Golf, sports, blogging, running, your music tastes, gambling, and drinking are of no interest to her.
